为地下餐厅装“鱼缸”
现在,很多餐厅在负一楼,因为负一楼人流量也大,但房租要比一楼便宜很多。可是,负一楼空气不好,让餐厅老板对其敬而远之。经营餐厅的潘枫通过考察发现,一种外表似鱼缸的高科技装置,能产生负氧离子,让负一楼的空气跟一楼一样好。潘枫引进了这种净化装置在自己的负一楼餐厅,三年下来预计节约100多万元。他还转向卖“鱼缸”,帮老板们节约租金,开业才一个月,已经有几十人前来咨询。

武汉的满汉家宴实验店,是家食材店。该店去年10月开业,一楼卖食材,二楼请来星级酒店大厨现场免费教炒菜,不到半年时间,就吸纳了千名会员。店方介绍,每个周末课堂都会教两三道菜,固定有10~30多人参与。课后,每位顾客都会购买相关的食材回家,平均消费在百元左右。开业仅4个月,该店就开了另一间面积超过1300平方米的旗舰店。

农民转行村导游
风光秀美、历史悠久的福建山重村,吸引众多城里人下乡寻“土味”。看着城里人常在自家的田埂上行走,55岁的农民薛耀辉干脆放下锄头,引领城里人看看自己再熟悉不过的村庄,给城里人讲讲发生在田间地头的奇闻怪事,成了山重村第一位“本土”导游。薛耀辉说:“现在的收入,比下田种地的那个时候翻了两倍都不止。”
双皮奶
双皮奶色白,香气浓郁,入口嫩滑,三感占全,做起来也不难。
原料:一大碗蒙牛牛奶(400ml左右)、蛋清二只、白砂糖二勺(或者不放糖放炼乳,这样会更香纯)
1) 先把牛奶倒到锅中刚煮开即可(烧久了会破坏蛋白质,也结不起奶皮了),然后再倒入大碗,这时可以看到牛奶表面结起一层皱皱的奶皮。
2) 拿一个空的大碗中放入二只蛋清(蛋清蛋黄分离的方法想必大家都会的,就不多说了)、二勺糖,搅匀至糖溶解(不要打太久,否则变蛋泡了)
3) 等牛奶稍凉后,用筷子把奶皮刺破,再将牛奶慢慢倒入装有蛋清的大碗,搅拌均匀,再沿碗边缓缓倒回留有奶皮的大碗,可以看到奶皮会自己浮起来。
4) 最后将牛奶放入锅中隔水蒸十分钟左右,用筷子从中间刺入,没有牛奶流出说明全部凝结起来了,大功告成啦。
第一层奶皮甘香,第二层香滑,配合得天衣无缝,故名“双皮奶”,冷吃热食均可,一样的美味无敌。喜欢的话还可以加入莲子、红豆一起蒸,更是营养丰富,美容佳品哦。 秘诀:1. 要用全脂奶,脂肪含量越高越好;2. 牛奶煮开要放一会儿,让奶皮有时间充分凝结;3. 要用文火慢慢炖,牛奶刚刚全部凝结就关火,老了口感就不好
姜撞奶
其实传统来说,姜撞奶需要用水牛奶制作,不过一般的纯牛奶都可以了。最好用蒙牛或者光明的特浓牛奶。 tx们要看清楚生产日期哦~~三聚氰胺的阴影还在~~囧~~
做法:
生姜洗干净去掉皮,可以用榨汁机,榨汁器把姜汁榨出来备用。我用的是多功能的切菜器把姜磨成茸,然后用勺子把姜汁积压出来。
一人分量——一碗牛奶,1-2个勺子的姜汁,主要看你能不能吃辣
如果姜汁比较浓,1个勺子就搞定了。
牛奶需要加热,这个时候加上糖,调配到你喜欢的甜度,热了以后熄火。需要把加热的牛奶冷却到70-80度,其实这个容易掌握,你尝一口牛奶,大概是中温左右的感觉就可以了。不行就直接拿温度计测试吧。
好了,现在开始姜撞奶了,有几个需要注意————
不能拿姜汁倒入牛奶里面,必须是牛奶倒入姜汁,其实不能说是
倒入,应该是冲入姜汁里面,要一气呵成,不能断断续续,要冲就一次冲进去,不然不能凝结。最好冲的时候有力度一点。
所谓的姜撞奶就是这样了。
当牛奶倒入姜汁以后,别动,安静等待牛奶凝结,如果姜汁好的话
5分钟内就会凝结,我今天做的就是五分钟内搞定了:)
一般等候5-15分钟,牛奶就会凝固,好像比布丁稀一点的状态。
就可以拿勺子挖来吃了,你可以拿汤匙放在上面~能承得住汤匙就ok了~
这个是一个很适合冬天吃的甜品 。
鲜奶炖蛋 额~它和蛋羹的区别我还是不是很明白~~
材料:
牛奶,冰糖,鸡蛋
做法:
1、将牛奶、冰糖一起放入锅里,用慢火把粮充分溶解后关火,冷却备用。
2、把鸡蛋打开后,迅速搅拌。
3、将冷却好的牛奶加入已发好的蛋浆中搅匀。
4、将碗放入蒸笼里,先隔水将碗蒸热。
5、最后把以上搅好的蛋浆加入碗中,中火约蒸10分钟即成。 同理可证:椰汁鲜奶炖蛋、姜汁鲜奶炖蛋的做法也是差不多的。 如果不加糖,牛奶换成水,加点肉,加点虾米,就变另外一道菜啦~ 我们这里叫蒸水蛋~~~
提示:鸡蛋壳要留一个哦,因为一个鸡蛋就加两个鸡蛋壳的牛奶(或者水)。这样加的话,没有经验的人也可以做出很水的蛋哦~~【免费教人做菜】
芝麻糊 材料(4~6人分量):黑芝麻200克、白米1汤匙、冰糖适量、清水8碗。 滋润小百科:要煮出芝麻糊带糊状的质感,必须要落米浆;而想芝麻糊香一点,就应再放少许白芝麻一齐煮。
做法:
1.将黑芝麻和米洗净,浸2小时。
2.将黑芝麻、米及4碗水放入搅拌机内,搅5分钟,将芝麻及米搅至全烂。
3.将芝麻米浆倒在鱼袋布内,隔渣,令芝麻糊更滑。(如用茶隔,需隔2小时以上)
4.把4碗水及冰糖放入煲内,煮溶,再放芝麻米浆,慢火一边煮,一边搅动,煮至糊状即成。

【家常溜肝尖】1在清水里滴点白醋,把猪肝浸泡半个钟头以上;2泡好的猪肝切薄片,下醋、和白糖,生粉拌匀;3炒锅下油,倒入猪肝,翻炒至变色后盛起;4锅里底油爆香葱白,姜丝蒜片和红椒丝;下适量的辣椒酱炒出红油,倒入猪肝;6再下黄瓜片和黑木耳,下盐,生抽,葱段炒匀;7起锅前加胡椒粉即可。
【红烧排骨】1、锅里放油,加热后生姜葱放入炒香,然后把肋排入入锅内翻炒,2、等肉变色发白后,加入酱油、料酒、糖,然后加入刚好淹没肋排的开水。3、大火烧滚后,改小火微炖20分钟左右。4、看肋排已经烧烂后,视咸淡加入适当的盐,然后改大火收汁即可。
【五彩焖面】1.圆葱.胡萝卜.土豆.香菇切丁,木耳切细丝,面条煮8分熟捞出;2.锅中油热后放圆葱丁炒香,放土豆丁.胡萝卜丁;3.加2大勺香辣牛肉酱翻炒,剩下的配料一起入锅中炒匀;5.加少许高汤.盐.耗油.白糖,稍煮一会;6.放煮过的面焖制,等汤汁收的差不多即可。
【鱼香烘蛋】1.锅里放油,入辣豆瓣酱翻炒,加姜末.蒜末,后加高汤.酒酿.味琳.酱油,关火备用;2.鸡蛋打匀并加高浓度的水淀粉,锅中油热入蛋液,等底部煎黄,翻面再煎另一面;3.待鸡蛋膨胀,关火盛盘;4.酱汁加热勾薄芡.加香油.葱花,淋在鸡蛋上即可

【虾肉小丸子】1、鲜虾去皮打成虾蓉。2、虾蓉中加入蛋清,肉馅,放入葱姜末、胡椒粉、盐、绍酒、淀粉迅速搅匀。3、将馅搓成丸子,放入抹好油的盘中待用。4、炒锅倒油,烧至4成热,放入虾丸煎制,直至两面金黄。5、最后装盘撒少许椒盐、香菜点缀即可。
【豆沙卷饼】1、鸡蛋和面粉搅匀,加入牛奶搅拌成无颗粒的面糊。2、平底锅烧热,用刷子薄薄刷一层油,舀起一勺面糊倒入,端起锅子轻轻转动,让面糊尽量摊成圆形;3、小火将面糊煎至凝固后,抹上一层红豆沙。4、将面糊卷起来,再倒点油煎至两面金黄即可。
【干锅萝卜】一块五花肉过开水焯一下,捞出切片;白萝卜去皮切片,青红辣椒切斜段,蒜苗切段,姜切丝;锅中少放油,下五花肉煸炒至金黄;放入青红椒姜丝,点料酒、生抽、蚝油、少许糖翻炒;萝卜入锅,倒入一碗水,盖盖中火焖煮;待汤汁收紧,放入蒜苗略炒,放入适量盐和鸡精
【鸡腿烧豆腐】1、葱姜蒜切末,豆腐、水发香菇洗净切块,鸡腿切块、洗净。2、锅内放适量植物油,烧热,改小火,姜蒜末炝锅。3、放入鸡腿块炒至断生。4、放入豆腐、香菇翻炒。
5、烹入豆瓣酱、生抽、白糖、水兑的汁,再加入较多的水,烧开后转小火慢慢煨至收干汁 6勾薄芡,盛出,撒上葱花即可
